For the cake: 6oz/170g Caster sugar 6oz/170g Stork margarine 3 Medium eggs 6oz/170g Self-raising flour 1tsp Baking powder 1tsp Vanilla extract For the topping: Raspberry jam Desiccated coconut Preheat oven to 180C/350F/Gas mark 4. -Put caster sugar and Stork margarine in a bowl and beat until light and fluffy. -Add eggs and whisk. Add vanilla extract and whisk again until creamy and runny. -Sift the self-raising flour and baking powder into the mixture and fold in with a wooden spoon. Whisk for 10 seconds so that the air stays in the mixture to make the cake fluffy but also makes sure the ingredients are all combined. The mixture should have a thick creamy texture. -Butter and flour or line with greaseproof paper a square baking tin and pour the mixture into the tin. -Put into the oven for 20-30 minutes until the surface is golden and the cake bounces back when you touch it. -Let cool for 20 minutes. -Tip out onto a plate so that the flat bottom is up. -Spread a thin layer of jam onto the cake then sprinkle with the desiccated coconut so you can just about see a bit of the jam in places. -Cut into squares.     Description: In this video, Betty demonstrates how to make Frozen Chocolate-Dipped Bananas. These are frozen treats that you can enjoy any time of the year?even in cold weather! Ingredients (for 4 servings): 2 whole fresh bananas lemon juice 6-oz. semisweet chocolate chips 6-oz. peanut butter chips � cup salted, roasted peanuts, finely chopped (I used an electric kitchen chopper to chop peanut halves into small pieces.) 4 popsicle sticks Peel 2 bananas, removing any banana fiber that clings. Cut each in half, crosswise. Place them in a small bowl and splash some lemon juice over them to keep them from turning brown. Insert a popsicle stick into the cut end of each banana and push it in far enough to hold the banana by gripping the popsicle stick. Line an 8-inch square pan with waxed paper, place the 4 prepared bananas on the waxed paper, and place them in a freezer until they are very cold. Now, melt 6 oz. chocolate in the top of a double boiler. When chocolate is melted, hold each banana by its popsicle handle, dip it into the melted chocolate, and use a spoon to get it covered completely. The chocolate coating will set up very fast, because the bananas are very cold. Place each chocolate-coated banana back on the waxed paper in the pan and return to the freezer until coating is very cold. The Frozen Chocolate Bananas are now ready to serve. Ingredients (for 2 medium-sized slushies): 1/8 section of medium-sized round, seedless watermelon, cut into chunks and frozen (Remove the rind, and, if your watermelon has seeds, remove the seeds before freezing.) 6-oz. package red raspberries, washed, dried with paper towel, and frozen fresh raspberries and mint leaves for garnish Place frozen watermelon chunks in blender. Turn blender to "liquefy" and blend until watermelon is fairly smooth, but still a little chunky. Pour the watermelon slush about 2/3 of the way up in 2 dessert glasses. Pour any leftover watermelon slush into a pitcher for replenishing your drink later. Now put 6 ounces of frozen red raspberries in the blender. Blend until the raspberries are the consistency you want. All you need is a good recipe. These are perfect for Cinco de Mayo or anytime. You will need the following items 1. a blender 2. ice 3. salt 4. 1 lime 5. a shot class 6. a measuring cup 7. margarita glass(es) The frozen margarita recipe, serves 2: Ingredients: 1 oz. lime juice 6 oz. sweet and sour 3 oz. or more of 100% agave Tequila 1 oz. triple sec 1 tsp. simple sugar 2 cups more or less of ice Directions: First make simple sugar by placing 1/2 cup of sugar and 1/2 cup water in a sauce pan. Heat and stir over medium heat until the sugar is completely dissolved. Set aside to cool. You can chill your margarita glass(es) in the freezer before serving if you wish. Cut a lime into wedges. Take one of the wedges and rub the rim of the glass then dip the wet edge into the salt. Fill the blender with all of the ingredients listed above ending with the ice. Blend for about 15 seconds. If you use a Vitamix blender like I did in the video, you may only have to blend for 10 seconds as these blenders are very powerful. You may also vary the amount of ice you use depending on how slushy you like your margaritas. Use less ice for a thinner consistency and more for a thicker margarita. Add celery, chard and parsley and saut� until tender. Add crushed tomatoes, tomato sauce, tomato paste and wine or water. Salt and pepper to taste. Add crab, making sure crab is submerged in ciopinno sauce, if not add more wine or water. Simmer at least 45 minutes with occasional gentle stirring to prevent sticking.

Stir to combine. Pour into medium-sized casserole dish (which you may spray with cooking oil spray, if desired). Sprinkle � cup shredded sharp cheddar cheese over top. Bake at 350 degrees for about 10 to 12 minutes, or until bubbly and cheese is beginning to brown. (I turned my oven to broil for the last minute or so, to get a nice crusty top.)
